As a mixing/mastering engineer I can tell you that there is a substantial difference between cheap and expensive mics in the correct recording space and that will definitely be heard in the final result.

Yeah, mixers do this stuff all day long with EQ... open up frequencies to let other things breath. If you can plan ahead that effectively, and accomplish this with mics at the source end, all the better.
